Stir-Fried and Simmered Pak Choi with Age
Tender pak choi and savoury deep-fried tofu gently simmered in a light dashi broth — simple, wholesome, and comforting.

- 150 g pak choi
- 1 sheet of age (deep-fried tofu)
- 150 ml soup stock (dashi)
For the sauce:
- 1 tbsp sake
- 1 tbsp soy sauce
- 1 tbsp mirin
Trim and cut pak choi into 1½–2 inch lengths.
Put the age in a sieve. Pour boiling water over both sides to remove the excess oil. Drain any remaining water, then pat dry with kitchen paper. Cut it in half lengthways. Slice into strips.
Mix all the sauce ingredients in a bowl.
Heat 1 tsp olive oil in a frying pan over a medium heat, then add the pak choi and stir-fry until it softens.
Add the age and dashi. Once it comes to the boil, add all the remaining sauce ingredients and simmer for 5 minutes.
Serve on a plate with the sauce.
