
Stir-Fried and Simmered Pak Choi with Age
Tender pak choi and savoury deep-fried tofu gently simmered in a light dashi broth — simple, wholesome, and comforting.
Ingredients
- 150 g pak choi
- 1 sheet of age (deep-fried tofu)
- 150 ml soup stock (dashi)
For the sauce:
- 1 tbsp sake
- 1 tbsp soy sauce
- 1 tbsp mirin
Instructions
- Trim and cut pak choi into 1½–2 inch lengths.
- Put the age in a sieve. Pour boiling water over both sides to remove the excess oil. Drain any remaining water, then pat dry with kitchen paper. Cut it in half lengthways. Slice into strips.
- Mix all the sauce ingredients in a bowl.
- Heat 1 tsp olive oil in a frying pan over a medium heat, then add the pak choi and stir-fry until it softens.
- Add the age and dashi. Once it comes to the boil, add all the remaining sauce ingredients and simmer for 5 minutes.
- Serve on a plate with the sauce.
