Tuna Teriyaki
Fish Teriyaki is a classic Japanese home-style dish.
Fish can be Tuna, Yellowtail or Salmon and a fillet is seared with a glossy teriyaki glaze, rich in natural umami.

tuna fillets
(200-250g)

flour or cornflour
For the sauce:

tbsp
sake
2
tbsp
soy sauce
1
tbsp
soup stock
(dashi)

tbsp
mirin or sugar

tsp
oyster sauce
(optional)
Instructions
Sprinkle salt over the tuna and let it sit for about 10 minutes. Rinse off the salt with water and pat the tuna dry with kitchen paper.
Lightly coat both sides of the tuna with flour.
Mix all the sauce ingredients in a bowl.
Heat 1 tbsp olive oil in a frying pan over a medium heat, then add the tuna and sear until both sides are nicely browned.

Turn the heat to low. Wipe off any excess oil from the pan with kitchen paper, then add the mixed sauce.

Spoon the sauce over the tuna from time to time. When the tuna is well coated with the sauce, take it off the heat and transfer it to a serving plate.
