Radish & Carrot Namasu
Namasu is a light and refreshing side dish typically made with finely sliced radish and carrot pickled in a sweet vinegar dressing. It’s crisp, colorful and slightly tangy.

- 200 g radishes
- 20 g carrot
- 1/4 tsp salt
For the dressing:
- 20 ml vinegar
- 1 tbsp soup stock (dashi)
- 1 tbsp sugar
Julienne the radishes and carrot.
Place them in a bowl. Sprinkle with the salt, then mix them well. Let them sit for 10 minutes to draw out the moisture.
Gently squeeze out excess liquid from step 2, then put them in a container.
In a small bowl, combine all the dressing ingredients, then stir them until the sugar dissolves.
Add the dressing to the container, then mix well with the radishes and carrots.
Let it sit for 10 minutes in fridge before serving.
