Japanese Rolled Omelette with Dashi
The dashi flavour fills your mouth as you bite into the fluffy, soft texture of Japanese omelette called dashi-maki tamago.

- 2 eggs
- 2 tbsp soup stock (dashi)
- 1 tsp sake
- 1 tsp mirin
- 1 tsp soy sauce
Beat the eggs in a bowl. When mix the eggs, first lift up the egg whites several times with cooking chopsticks without letting it foam.
Combine the remaining ingredients in the bowl.
Heat 1/2 tbsp olive oil in a frying pan over a medium heat, then pour the egg mixture from step 2. Gently stir and spread it evenly across the pan once it becomes slightly set but still soft.
Turn the heat to low. Fold both sides of the omelette toward the center to form a long rectangular shape, then roll it up from the far side toward you in several folds.
Once it has cooled slightly, cut into bite-sized pieces.
