Goma-ae Asparagus
Asparagus with Sesame Dressing (Goma-ae) is a simple and healthy Japanese side dish made by mixing roasted asparagus in a savoury-sweet sesame sauce. It's a great way to enjoy seasonal vegetables with a nutty, umami-rich flavour.

- 1 bunch of asparagus (110-125g)
For the dressing:
- 2 tbsp roasted sesame seeds
- 1 tbsp soup stock (dashi)
- 1/2 tbsp soy sauce
- 1/2 tbsp mirin
Trim the asparagus. Place them on a baking tray.
Grind the sesame seeds in a mortar.
Mix the sesame seeds with the rest of the dressing ingredients.
Preheat the oven to 200 °C. Cook the asparagus slowly for about 15 minutes until the surface becomes lightly brown.
Take them out from the oven, then cut them into pieces about 2 inches long.
Mix the asparagus in the sesame dressing until it becomes evenly coated.
Serve chilled or at room temperature.
