Onigiri is a classic and beloved food among Japanese filled with savoury ingredients as you like. Instead of shaping it by hand, Folded onigiri is made by folding it into a triangle shape.
Lightly salt a salmon fillet, then grill it. Remove the skin and bones, then break it up with a fork.
Cut a sheet of nori seaweed in half lengthways. Place one cut nori lengthways.
Leave about 2 inches of space at the bottom, then place half of the rice (50g) slightly below the center of the nori.
On the top of the rice, add the filling. Cover it with another 50g of rice.
Fold the bottom left corner upward, using the bottom right corner as a pivot point covering the rice. Then fold the bottom right corner to meet the top left corner. Lastly, fold the top right corner over, forming a triangle.
Finish by placing the filling on the tip of the onigiri.
