Dashi Simmered Sweet Potatoes
Packed with the umami of dashi, this simmered sweet potato dish is a staple Japanese side dish you can prepare in advance.

- 1 sweet potato (200g)
- 300 ml soup stock (dashi)
- 1/2 tbsp sugar
- 1/2 tbsp mirin
- a pinch of salt
Leave the skin on the sweet potatoes and slice them into discs 1 inch thick.
Soak the potatoes in cold water for 10 minutes. Drain well.
Put the sweet potatoes, dashi and sugar in a small pot. Cover with a drop lid and heat over a medium-high heat.
Once the broth comes to a boil, reduce the heat to medium and simmer for 10 minutes. Add the salt and mirin and simmer for 7 minutes until tender.
A drop lid is placed directly on simmering food to help it cook evenly and soak up flavour.
