
Tuna Teriyaki
Fish Teriyaki is a classic Japanese home-style dish. Fish can be Tuna, Yellowtail or Salmon and a fillet is seared with a glossy teriyaki glaze, rich in natural umami.
Ingredients
- 2 tuna fillets (200-250g)
- 1 tsp salt
- 1 tsp flour or cornflour
For the sauce:
- 2 tbsp sake
- 2 tbsp soy sauce
- 1 tbsp soup stock (dashi)
- 1 tbsp mirin or sugar
- 1 tsp oyster sauce (optional)
Instructions
- Sprinkle salt over the tuna and let it sit for about 10 minutes. Rinse off the salt with water and pat the tuna dry with kitchen paper.
- Lightly coat both sides of the tuna with flour.
- Mix all the sauce ingredients in a bowl.
- Heat 1 tbsp olive oil in a frying pan over a medium heat, then add the tuna and sear until both sides are nicely browned.
- Turn the heat to low. Wipe off any excess oil from the pan with kitchen paper, then add the mixed sauce.
- Spoon the sauce over the tuna from time to time. When the tuna is well coated with the sauce, take it off the heat and transfer it to a serving plate.
