Dear Japanese Food Lovers,

Hello from Aiko at isfor WA, Oxford!

Happy Father’s Day! Thinking of my two incredible fathers in heaven, this may be the best topic to talk about today.

Do you have any local or family special dishes?

Japanese cuisine isn’t just sushi and ramen — it’s full of beautiful, local dishes passed down through generations.

This month, we’re highlighting a beloved comfort food from Okinawa:
🥕 Ninjin Shirishiri — a simple stir-fry of carrots, egg, and tuna, seasoned gently with soy sauce.

It’s quick, affordable, and packed with flavour — perfect for lunch boxes or a light dinner.

In our on-demand video class, we’ll guide you through each step, including:

  • How to prep the carrots just right
  • The balance of flavour between dashi and soy sauce

Why Try Regional Japanese Dishes?

They’re full of character, easy to make at home, and offer a deeper connection to Japanese food culture. We’ll be introducing more in our upcoming lessons.

By the way, I’m from Yamanashi prefecture, famous for Mount Fuji, and my beloved regional dish is, of course, Hōtō — a hearty noodle stew with pumpkin ❤

Happy Cooking!

Aiko
