Learn authentic Japanese home cooking through a calm, seasonal rhythm.
Each month, you’ll explore the ichiju-sansai style with carefully designed recipes you can recreate confidently at home.
This course provides monthly recipes and videos that bring the tradition of ichiju-sansai (one soup and three dishes) into your UK kitchen.
Perfect for anyone whether you’re new to Japanese food or rediscovering it.
Japan has four distinct seasons, and using seasonal ingredients is a fundamental principle of Japanese cuisine. These ingredients are not only fresh and full of flavour, but are also believed to support the body’s health in tune with each season. For example, recommended recipes for June, using common ingredients found in UK supermarkets, include easily Japanese-inspired dishes like a simple asparagus and new potato salad with a soy-mirin dressing or a refreshing cucumber and wakame seaweed sunomono (vinegared salad).
We will also introduce recipes related to annual events aligned with the four seasons.

— Stephanie T., UK
“I’ve tried Japanese recipes before, but this was the first time I truly understood why the food tastes the way it does. Learning the basics — from making proper dashi to balancing flavours in dishes like teriyaki tuna — completely changed my cooking. The lessons were calm, clear and encouraging, and everything felt achievable at home. It’s not just about recipes, but understanding Japanese home cooking and culture in a really meaningful way.”
