Dear Japanese Food Lovers,

Hello from Aiko at isfor WA, Oxford!

Every time I see pumpkins, I’m reminded of my mum’s nimono (simmered pumpkin).
It was cooked in a sweet and savoury soy-based sauce — rich in flavour, tender and soft, yet never falling apart.

In Japan, people often say that nimono tastes a little different in every household — it’s one of those dishes that truly reflect “home.”
What’s a dish that reminds you of home?

As for my dad, his signature dish was a Sunday lunch classic — instant noodles simmered with cabbage.
It might sound like junk food, but with a bit of egg and vegetables, it became a proper, satisfying meal. Delicious memories!

And just so you know, my daughter’s Halloween costume this year is a cheerleader zombie! I can’t wait to see how it turns out.

Happy Cooking!

Aiko
