In Japanese cooking, aubergines are true all-rounders — you can grill them, simmer them, or fry them, and they soak up any flavour beautifully. They’re often seen as the “model student” of side dishes, perfect with a bowl of rice.

What’s fascinating is how their taste and texture change depending on how you cut them!
