Have you ever heard of Ichiju-Sansai? It’s a traditional Japanese meal structure that perfectly balances nutrition and flavour. The phrase means “one soup, three dishes,” and it’s the foundation of a wholesome Japanese dinner.
What is Ichiju-Sansai?
- One Soup: Typically miso soup or a clear broth.
- Three Dishes:
- One main dish — often fish, chicken, or tofu.
- Two side dishes — usually seasonal vegetables or pickled items.

This meal style highlights seasonal ingredients and harmony between flavours, textures, and nutrients. It’s simple yet elegant and reflects the heart of Japanese home cooking.
