Dear Japanese Food Lovers,
Hello from Aiko at isfor WA, Oxford!
Have you ever heard of natto? It’s a traditional Japanese fermented food made from soybeans — known for its strong aroma, sticky texture, and rich umami flavour. Natto is considered a super healthy food in Japan, packed with protein, fibre, and probiotics. My daughter and I both love it!
However… my husband isn’t such a fan — mainly because of the sticky texture and smell! So, natto often becomes our go-to dinner when he’s not home.
In the UK, you can usually find frozen natto at Asian supermarkets, but recently it’s been hard to get. So I decided to try making it myself! Since I couldn’t get soybeans at the local supermarket, I experimented with frozen edamame instead.
It’s still a work in progress, but once I perfect the method, I’ll be sharing the recipe with you all at isfor WA. Stay tuned — and maybe, you’ll be inspired to give homemade natto a try too!
Happy Cooking!
Aiko
