Hello from Aiko at isfor WA, Oxford!

Japanese food has a healthy image around the world — and much of it truly is. But it’s also often said to be high in salt. At Isfor WA, we do things a little differently. By adding flavour-rich dashi, we can cut back on seasonings without losing that satisfying umami. For example, in teriyaki we use less soy sauce and sugar, and in simmered dishes we reduce the soy sauce, sugar, mirin, and sake — yet the depth of flavour remains. We also choose reduced-salt soy sauce and miso, so you can enjoy Japanese favourites with a lighter touch.

By the way, do you ever struggle with what to cook each day?
I usually order all my groceries for the week from Ocado and plan my meals roughly according to the expiry dates of what arrives.
It really helps reduce food waste and unnecessary shopping.

To avoid falling into the same cooking routine, I like to challenge myself by trying new ingredients or recipes I’ve never used before. It’s great fun — and a bit of a workout for the brain too!
