In Japan, at the start of autumn it is the season for sanma (Pacific saury) — This slender, silver fish is a true seasonal delicacy, enjoyed simply salted and charred until the skin crisps and the rich oils bring out its full flavour. While sanma is difficult to find in the UK, you can enjoy a similar flavour and texture by using mackerel or sardines instead.

Why Seasonal Eating Matters

Japanese cuisine is deeply tied to the seasons. By cooking seasonally, we not only enjoy ingredients at their best, but also connect with traditions that celebrate nature’s rhythm.

By the way, apart from food, my memories of the start of autumn in Japan are the fragrance of osmanthus blossoms and, of course, the autumn leaves.
