
Kabayaki-style Sardines
Sweet and savoury grilled sardines glazed with soy sauce – a traditional Japanese dish full of umami.Quick, flavourful, and packed with healthy omega-3s!
Ingredients
- 4-5 sardine fillets (150g)
- cornflour as needed for coating
For the sauce:
- 1.5 tbsp soy sauce
- 1 tbsp soup stock (dashi)
- 1 tbsp mirin
- 1 tsp sugar
Instructions
- Clean and fillet the sardines if needed. Pat them dry.
- Lightly coat them with cornflour, then gently shake off the excess.
- Mix all the sauce ingredients in a bowl.
- Heat 1/2 tsp olive oil in a frying pan over a medium heat. When hot, place the sardines skin-side down and cook. Once the skin is nicely browned, flip and cook the other side.
- Cook for another 2–3 minutes until the sardines are about 80% done, then add the prepared sauce.
- Once the sauce starts to thicken slightly, lower the heat a little and spoon the sauce over the sardines as it reduces. Let it cook until the glaze is rich and slightly sticky.
