A monthly recipe & video subscription bringing the tradition of ichiju-sansai (one soup, three dishes) into your UK kitchen.
Perfect for anyone aged 25 to 65+, whether you’re new to Japanese food or rediscovering it.

Japan has four distinct seasons, and using seasonal ingredients is a fundamental principle of Japanese cuisine.

These ingredients are not only fresh and flavorful, but are also believed to support the body’s health in harmony with each season.

We will also introduce recipes related to annual events aligned with the four seasons. For example, recommended recipes for June, using common ingredients found in UK supermarkets, include easily Japanese-inspired dishes like a simple asparagus and new potato salad with a soy-mirin dressing or a refreshing cucumber and wakame seaweed sunomono (vinegared salad).

  • In this course, you’ll learn the essence of Japanese home-style cooking through the concept of Ichijyu-Sansai — “one soup and three dishes.” It’s a simple yet deeply balanced way of eating that combines nutrition, flavour, and mindfulness.
  • The course includes easy-to-follow recipes & on-demand videos of three seasonal meal sets (main, 1st side and 2nd side or soup) with a bonus recipe & tips and Q&A access.
  • 🍲 Make delicious homemade dashi (Japanese soup stock) — the foundation of umami. 🥢Prepare seasonal side dishes that complement each other in flavour and colour. 🌿 Create a well-balanced meal that nourishes both body and mind.
  • "Healthy Japanese Flavours – Less Salt, More Umami!" At Isfor WA, dashi does the hard work, so we can use less seasoning — even in teriyaki or simmered dishes. We choose reduced-salt soy sauce and miso, cut back on sugar and other seasonings, yet keep all the rich, satisfying flavour.
